>>WE’VE COME OUT TO THE WEHR NATURE CENTER IN MILWAUKEE COUNTY’S WHITNALL PARK, WHERE THERE ARE PLENTY OF ACTIVITIES TO ENJOY BOTH INDOORS AND OUT ALL YEAR LONG. IN JUST A FEW MINUTES, DEB WOLNIAK GETS SOME OUTDOOR COOKING TIPS AT THE HIGHLANDS SPORTSMEN’S CLUB IN CASCADE FROM EXECUTIVE CHEF KRISTA KLINTER. THEN WE’LL MEET TWO-TIME STATE YOUTH TURKEY CALLING CHAMP, AUSTIN STANKOWSKI, AND EMMY FINK TAKES IN LAST YEAR’S NATIONAL ARCHERY IN THE SCHOOLS PROGRAM WORLD CHAMPIONSHIPS IN MADISON. BUT FIRST, WE’LL GET A PREVIEW OF THE 75TH ANNUAL “MILWAUKEE JOURNAL SENTINEL” SPORTS SHOW COMING TO STATE FAIR PARK IN MARCH. IT CELEBRATES THE OUTDOOR HERITAGE OF WISCONSIN, THE LOVE OF THE OUTDOORS, WISCONSIN IS ONE OF THE TOP FIVE STATES IN EVERY CATEGORY IN THE OUTDOORS, HUNTING, FISHING, CAMPING, BOATING, THAT’S WHY THIS SHOW IS A SUCCESS. IT’S ABOUT FAMILIES, IT’S ABOUT HAVING FUN. THREE, FOUR GENERATIONS OF TRADITION HAVE COME THROUGH THESE DOORS.>>NOW, SOME OF THE FEATURES OF THE SHOW HAVE CHANGED OVER THE YEARS, BUT SOME THINGS HAVE NEVER CHANGED.>>WELL, ONE OF THE THINGS THAT’S NEVER CHANGED IS TROPHY ATHLETIC. THEY WERE HERE AT THE FIRST SHOW 75 YEARS AGO AND THEY’RE HERE THIS SHOW. THE TANK SHOW HAS BEEN VERY MUCH THE SAME, THE LOG ROLLING, USED TO BE 10,000 PEOPLE IN THE AUDITORIUM AND ARENA COMING INTO THE TANK SHOW AND THE WHOLE SHOW WOULD CLOSE. WE DON’T DO THAT ANYMORE, BUT I THINK THAT THE TROUT POND HAS BEEN HERE SINCE DAY ONE, WE MIGHT HAVE SOME SPECIAL FISH IN THE TROUT POND FOR THE 75th YEAR.>>FOR PEOPLE WHO HAVE NEVER BEEN TO A SPORTS SHOW AND IT’S HARD TO IMAGINE, BUT THERE HAVE GOT TO BE SOME OUT THERE, WHAT DO YOU TELL THEM?>>THE SPORTS SHOW IS THE GREATEST WAY TO COME INSIDE AND DREAM ABOUT THE OUTDOORS. IF YOU’RE GOING TO BOOK A TRIP, BUY A BOAT, COME AND SEE YOU, LEARN HOW TO TIE A FLY. I THINK A SPORT SHOW, THE REASON IT’S BEEN SO SUCCESSFUL, IT’S ABOUT FAMILIES. FAMILIES COME HERE TO CELEBRATE THEIR LOVE OF THE OUTDOORS IN WISCONSIN.>>WELL CHARLIE WEE, I’M LOOKING FLOORED TO THE 75th, THANKS SO MUCH FOR TALKING WITH US AND I HOPE WE HAVE A GREAT SHOW.>>WE WILL.>>TALKING WITH LEGENDARY ANGLER DAN GAPEN. YOUR FAMILY HAS BEEN IN THE FISHING INDUSTRY FOR MANY MANY YEARS.>>YES, SINCE 1936, BUT MY GRANDFATHER PRIOR TO THAT WAS TYING FLIES WAY BEFORE THAT. CAME OUT OF ENGLAND, SO WE’VE BEEN FLY-TYING FOR YEARS AND YEARS AND YEARS.>>AND ONE OF THE FLIES THAT’S ASSOCIATED WITH THE GAPEN NAME OF COURSE IS THE MUDDLER MINNOW AND YOUR DAN DON INVENTED THAT I UNDERSTAND.>>IT’S THE LEADING TROUT FLY IN THE WORLD. WE PRODUCE IT IN MASSIVE NUMBERS. OUR FLY DIVISION FOR OUR COMPANY IS THE BIGGEST THING WE’VE GOT GOING. AND WE MAKE RIGHT AT A MILLION FLIES A YEAR.>>NOW YOU HAVE A COUPLE OF EXAMPLES HERE. LET’S TAKE A LOOK AT THEM.>>OK. HERE WE GOT RIGHT HERE, WE’VE GOT TWO MUDDLERS, THIS IS A ONE ODD AND THIS IS THE NUMBER 4. BUT THE NICE THING THAT WE DO FOR THE ANGLER IS WE TIE THEM UNWEIGHTED ONE, WE TIE WITH BLACK THREAD, THE WEIGHTED ONE, WE TIE FOR THREAD THREADS.>>NOW ANOTHER LURE YOU’RE FAMOUS FOR IS THE UGLY BUG.>>WE CREATED THE UGLY BUG 1968, AND IT’S A ROCK WALKING JIG FOR RIVER FISHING. CAST UPSTREAM, RETRIEVE DOWNSTREAM. IN 1971-1972, WE SOLD A MILLION OF THEM. THAT’S THE LARGEST SELLING LURE WE HAD EVER HAD UP UNTIL THIS DAY. WE’VE GOT A NEW ONE OUT NOW, WE CALL THE SPIN, WE THINK IT’S GOING TO OUTSELL THE UGLY BUG.>>SHOW ME THE SPIN BEE.>>IT HAS A TAILSPINNER ON IT AND A BUMBLE BEE PATTERN BODY. NOW, ALL BAIT FISH AT ONE POINT IN THEIR LIFE HAVE STRIPES ON THEM. AND THAT’S JUST LIKE A PERCH MINNOW, BUT ALL MINNOWS AT ONE TIME IN THEIR LIFETIME END UP WITH STRIPES, SO THAT’S A BUMBLE BEE PATTERN AND YOU’VE GOT THE TAILSPINNER, WHICH GIVES YOU A LOT OF FLASH. I TELL PEOPLE THEY’RE DEADLY ON EVERYTHING FROM SUCKERS AND CARP TO STEELHEAD, AND EVERYTHING IN BETWEEN. WE’VE RESEARCHED THEM FOR THREE YEARS, WE WERE WORRIED THAT THE TAILSPINNER WOULD AFFECT THE STRIKE OF THE FISH, AND IT HAS NO BEARING ON THE FISH, THEY COME IN AND TAKE IT.>>NOW YOU’VE TALKED ABOUT FISHING, WRITTEN ABOUT FISHING FOR YOUR WHOLE PROFESSIONAL LIFE AND HOW MANY BOOKS HAVE YOU WRITTEN NOW.>>I JUST FINISHED MY 27th.>>NOW YOUR LATEST BOOK, ADVENTURE FISHING OF THE AMERICAS, TELL US ABOUT THAT.>>WELL, THAT’S A BOOK THAT STARTS IN ARGENTINA AND ENDS UP IN BATHEN STRAITS. IT HAS A GREAT FOREWARD IN IT AND CHAPTER 4 HAS A STORY ABOUT HIS UNCLE GOT EATEN BY PIRANHAS.>>THERE’S BEEN A LOT OF FISHING CHANGES IN RECENT YEARS AN ONE UNFORTUNATELY IS WE’RE LOSING ANGLER NUMBERS. WHAT ADVICE DO YOU HAVE FOR GETTING MORE PEOPLE ESPECIALLY KIDS INTERESTED IN FISHING?>>IF I HAD MY FIRST CHOICE WOULD BE TO GET RID OF THE PRO ANGLE OF THE FISH INDUSTRY. WE’VE BECOME SO SOPHISTICATED KIDS WALK AWAY FROM IT. ONE OF THE THINGS WE’VE TRIED TO CONTRIBUTE FOR THE FOLKS WATCHING, I’VE NEVER BEEN A PRO ANGLER. I DON’T CONSIDER MYSELF SUCH. I’M JUST AN EVERYDAY AVERAGE GUY THAT FISHES JUST LIKE YOU. I GET SKUNKED AND I DON’T CATCH THAT MANY FISH AT TIMES, BUT I ENJOY FISHING. SO IF SOME WAY WE CAN PASS ON THAT LOVE OF FISHING. ONE OF THE THINGS WE’VE DONE, WE’RE PROVIDING THE SCHOOL SYSTEM WITH D.V.D.’S THAT SHOW UNDERWATER FOOTAGE TO SHOW THE KIDS, IF THEY HAVE AROUND EDUCATIONAL CLASS, AND IT SHOLES THE FISH STRIKES AND NO MONEY FOR US. BUT IT’S DOING WHAT YOU JUST SAID. GET THE CHILDREN INTERESTED.>>DAN, THANKS SO MUCH FOR ALL YOUR CONTRIBUTIONS TO ANGLING OVER THE YEARS AND FOR TALKING TO US TODAY AND GOOD LUCK FOR MORE YEARS TO COME.>>THANK YOU VERY MUCH. AT THE SPORTS SHOW, YOU’LL ALSO HAVE A CHANCE TO MEET THOSE ZANY GRILLING BUDDIES, MAD DOG AND MERRILL, ALONG WITH OTHER FOLKS WHO DO A LOT OF OUTDOOR COOKING. ONE GAL WHO’S TURNED OUTDOOR COOKING INTO AN ART IS KRISTA KLINTER, THE EXECUTIVE CHEF AT THE HIGHLANDS SPORTSMEN’S CLUB IN CASCADE. WHAT ARE WE COOKING?>>THE FIRST THING WE’LL DO IS A BACON WRAPPED STUFFED PHEASANT BREAST ON THE GRILL. THE FIRST THING WE’RE GOING TO DO IS TAKE ALL THE INGREDIENTS AND PUT THAT ALL IN A BOWL, STARTING WITH THE BREAD CRUMBS, WE’LL DO A HINT OF PEPPER AND DICED ONION, SOUR CREAM, CHOPPED ALMOND AND YOU CAN USE ANY FLAVOR ALMOND, PEPPER JACK CHEESE. WE’RE GOING TO MIX THIS ALTOGETHER AND ADD JUST A LITTLE BIT OF BUTTER FOR MOISTURE. WHAT IT’S GOING TO DO IS IT’S GOING TO HELP HOLD ITS SHAPE ONCE WE PUT IT IN TO THAT BREAST.>>OH. YOU’RE STUFFING IT.>>WE’LL TAKE ONE OF OUR BREASTS, ALWAYS ALWAYS THE INSIDE AND I’VE ALREADY POUNDED THEM OUT AND WHAT YOU WANT TO DO IS WHEN YOU PUT IT DOWN, MOVE IT AROUND A LITTLE BIT AND THEN YOU’RE GOING TO TAKE ABOUT A SCOOP LIKE THAT, AND IT’S OK IF SOME FALLS OUT. AND YOU’RE JUST GOING TO KIND OF USE YOUR FINGERS, AND JUST PUSH THAT IN LIKE THAT. OK. AND THEN JUST SET IT ASIDE FOR A MINUTE. GOING TO TAKE SOME SMOKED BACON, YOU’RE GOING TO PICK THOSE UP AND WHERE YOU KIND OF ROLLED THAT OVER LIKE THAT IS WHERE YOU’RE GOING TO WANT TO START THAT BACON. AND THAT BACON IS GOING TO HOLD THAT MEAT TOGETHER AND NOW WE’RE READY FOR THE GRILL.>>OK.>>SO TODAY WE’RE DOING BISON BURGERS HERE AS WELL.>>YES. WE’RE GOING TO START WITH OUR GROUND BISON. ALL WE’RE GOING TO DO IS ADD ALL OF THESE THINGS IN THERE. FIRST WE’RE GOING TO DO THE JALAPENO. I SUGGEST NOT USE YOUR FINGER TO GET IT OUT OF THERE. SWEET ONION, THE CELERY, BREAD CRUMBS, WORCESTERSHIRE SAUCE.>>RIGHT THERE YOU GOT MY HUSBAND’S ATTENTION.>>ONE EGG, SLIGHTLY BEATEN. A PINCH OF SALT AND A PINCH OF PEPPER. THE BEST WAY TO MIX THIS IS TO GO AHEAD AND PUT OUR GLOVES ON AND ALL YOU’RE GOING TO DO IS GET RIGHT IN THERE AND YOU’RE JUST GOING TO MIX EVERYTHING UP. ONCE YOU GOT THAT ALL MIXED TOGETHER, WHAT I LIKE TO DO IS PUT IT IN ALMOST LIKE A MEATLOAF, USE YOUR FINGERS AND THEN YOU HAVE, YOU KNOW, YOUR PATTIES RIGHT THERE. SO CAN YOU GO AHEAD AND JUST SQUEEZE THEM OFF.>>OK.>>MAKE A BALL IN YOUR HAND. GOING TO GO AHEAD AND KIND OF JUST FLATTEN IT OUT. I’M GOING TO TAKE MY GLOVES OFF. YOU CAN KEEP YOURS ON IF YOU LIKE AND THEN WE’LL GO AHEAD AND CHECK AREFIES ANT. — OUR PHEASANT.>>HOW DO YOU KNOW THEY’RE DONE?>>THAT’S A GOOD QUESTION. JUST LIKE CHICKEN, SEE HOW WHITE IT GOT. REMEMBER WHEN IT WAS STILL PINK. YOU HAVE YOUR GLOVES ON. GO AHEAD AND GRAB THOSE. I’M GOING TO PUT MY MIT BACK ON AND I’M GOING TO PULL THIS OUT AND THIS IS THE FUN THING ABOUT HAVING A TWO TIERED GRILL. PUT THEM KIND OF IN THE MIDDLE.>>OH, LOOK AT THAT SIZZLE.>>SLIDE THAT BACK IN.>>HOW LONG WILL YOU LET THESE GO FOR?>>THE BURGER WILL DEPEND ON BECAUSE IT WILL BE CLOSE, SO ANYWHERE BETWEEN SEVEN AND 12 MINUTES. WE’LL TAKE OUR PHEASANTS OFF THE GRILL.>>OH, YEAH.>>>>THAT’S WHAT I CALL EATING.>>HERE WE GO.>>THIS NEXT THING WE’LL DO IS OUR BUTTER MILK BASIL CHERRY TOMATO SALAD, THIS IS ONE OF THE ONES THAT THE GUYS LOVE HERE. IT’S NOT YOUR TYPICAL TOMATO SALAD. HAS THE BASIL AND GARLIC AND THINGS IN IT. SO WE HAVE SIX CUPS OF MULTI-COLORED CHERRY TOMATOES, WE HAVE TWO-THIRDS OF A CUP OF BUTTER MILK, A QUARTER CUP OF SOUR CREAM, THREE TABLESPOONS OF THINLY SLICED BASIL LEAVES, ONE SHALLOT MINCED, WE HAVE TWO CLOVES OF MINCED GARLIC. SO IF YOU COULD GRAB ME THAT WHITE BOWL RIGHT THERE, WHAT WE’RE GOING TO DO IS WE’RE GOING TO GO AHEAD AND ADD OUR INGREDIENTS IN FULL, SO HERE IS OUR TWO-THIRDS CUP BUTTER MILK. OUR QUARTER UP OF SOUR CREAM — CUP OF SOUR CREAM. OUR THINLY SLICED BASIL, OUR MINCED SHALLOTS, AND MINCED GARLIC.>>SO WHAT YOU CAN DO IS YOU CAN EITHER STIR, I PREFER TO MIX IT, JUST BECAUSE OF THE SOUR CREAM, SOMETIMES GETS A LITTLE, YOU KNOW, CHUNKY IN THERE, YOU’RE GOING TO GO AHEAD AND JUST WHISK THAT TOGETHER. AND THEN ONCE YOU’VE GOT THAT DONE, YOU’RE JUST GOING TO GO AHEAD AND YOU’RE GOING TO DRIZZLE THAT RIGHT OVER THE TOMATOES.>>LOOK AT THE COLOR ON THAT. OH MY GOSH.>>I THINK NOW WE’RE GOING TO GO AHEAD AND PUT THE PINEAPPLE ON AND CHUCK THE BISON BURGERS.>>OH, OK.>>WHAT WE’RE GOING TO DO IS TAKE HOUR SLICED PINEAPPLE AND I SLICED THEM QUITE THICK AND WE’RE JUST GOING TO GO AHEAD HAND USE THE SAME PAN THAT WE HAD THE PHEASANTS IN. BACON DRIPPINGS ARE GOING TO ADD SOME FLAVOR AND THEY’RE ALSO GOING TO HELP US FROM HAVING OUR PINEAPPLE STICK.>>ALL RIGHT.>>SET THIS ASIDE.>>HOW LONG ARE YOU LEAVING THE PINEAPPLE ON TORE?>>THE PINEAPPLE CAN STAY ON FOR MAYBE FIVE, SIX MINUTES.>>WE’RE GOING TO GO AHEAD AND PULL THIS OUT. LIFT ONE OF THESE GUYS. THEY’RE STARTING TO LOOK GOOD.>>OH, WOW.>>THAT LOOKS VERY NICE.>>AND SO IF YOU HAD TO GUESS THE TEMPERATURE OF WHAT YOU’RE DOING ON THE GRILL HERE, WHAT WOULD YOU SAY IT WOULD BE?>>OH, I BET WE’RE AT A GOOD 400, 450, I WOULD SAY. PRETTY WARM.>>YES.>>GO AHEAD AND TAKE THE PINEAPPLE OFF.>>OK. I’LL BE YOUR PLATE PERSON.>>PERFECT.>>SO FUNNY, EVERY TIME YOU GO OVER TO THE GRILL, THE SMOKE COMES RIGHT IN MY EYES.>>IT’S HILARIOUS. I DON’T KNOW IF IT’S BECAUSE WE’RE ALL OF A SUDDEN HERE BLOCKING THE WIND OR WHAT.>>AND THE LAST ONE, OH IS THAT LOOKING GOOD.>>OH, LOOK AT THAT.>>WE’RE GOING TO GO AHEAD AND TAKE THESE OFF.>>OH MY GOSH. THAT IS JUST BEAUTIFUL.>>SO NOW THEY’VE GOT SOME NICE COLOR. MOVED THEM OVER A LITTLE BIT.>>YEP.>>THERE WE GO.>>THAT IS BEAUTIFUL.>>PERFECTLY DONE.>>NOW, HEY, SHOULD WE BRING THIS INSIDE AND WE CAN GO AHEAD AND SET UP THE TABLE?>>I THINK WE SHOULD.>>I’M GOING TO TAKE A BITE OUT OF THIS AND I’M GOING TO TELL YOU, EITHER THUMBS UP, OR THUMBS DOWN. IF YOU KNOW WHAT I’M TALKING ABOUT.>>KIND OF SQUISH IT TOGETHER, MAKE SURE YOU GET IT IN THERE.>>SEE WHAT WE CAN DO. OH.>>AWESOME.>>UH-HUH.>>SO YOU JUST TRIED THE BURGER AND THEN WE HAVE THE STUFFED PHEASANT FOR US RIGHT THERE. SO CUT A PIECE OF THAT OFF.>>THIS IS — A LITTLE BIT OF THE BACON IN THERE. OK. NICELY DONE. THERE WE GO. YOU CAN TASTE THE GRILL, AND IT HAS A NICE FLAVOR.>>AND THE ONE THING, THIS IS NOT GAMEY. SOMETIMES WHEN PEOPLE ARE COOKING GAME, IT’S LIKE, OH, GEEZ, TOO GAMEY. THIS IS UNBELIEVABLE.>>GOOD.>>PERFECT MOISTURE. OK. AND THEN WHAT DO WE HAVE HERE?>>THEN WE’VE GOT OUR TOMATO BASIL SALAD, WITH THE BUTTER MILK DRESSING.>>OK. LET’S TRY THAT. NICE HANDS — AND FRESH.>>GARDEN FRESH.>>AND OF COURSE, OUR GRILLED PINEAPPLE.>>ALL RIGHT. HAVE A BITE OF THIS. WHY DIDN’T I KNOW ABOUT THIS BEFORE? THIS IS BEAUTIFUL. THIS IS A WHOLE MEAL THAT IS SO NUTRITIOUS FOR YOU AND YET WITH ALL THE DIFFERENT GAME THAT WE GET FROM WISCONSIN, THIS IS PERFECT. THANK YOU SO MUCH FOR SHARING THIS.>>THANK YOU FOR COMING OUT HERE. THIS WAS REALLY FUN.>>ABSOLUTELY.>>ANOTHER WILD GAME BIRD THAT’S GREAT COOKED OUTDOORS IS A WILD TURKEY, BUT FIRST YOU’VE GOT TO BAG A BIRD. THERE ARE A FEW WILD TURKEYS RUNNING AROUND HERE IN WHITNALL PARK, BUT YOU CAN’T HUNT THEM HERE. AT LAST YEAR’S MIDWEST OUTDOOR HERITAGE EDUCATION EXPO IN POYNETTE, WE MET A YOUNG FELLOW WHO’S HAD SOME LUCK BOTH HUNTING TURKEYS AND IN STATE TURKEY CALLING COMPETITION.>>FOR TWO YEARS IN A ROW, AUSTIN STANKOWSKI WAS THE JUNIOR STATE TURKEY CALLING CHAMPION. NOW MOST PEOPLE WHO CALL TURKEYS USE A BOX CALL OR SLATE CALL OR A MOUTH CALL, RIGHT?>>YEP.>>ON A BOX CALL, YELP SOUNDS LIKE THIS. BUT AUSTIN CAN CALL WITH HIS NATURAL VOICE. NOW WHAT’S THE ADVANTAGE OF CALLING WITH YOUR VOICE INSTEAD OF WITH A BOX CALL OR A SLATE CALL?>>YOU DON’T HAVE TO MAKE AS MUCH MOVEMENT WITH YOUR HANDS OR ANYTHING. YOU CAN JUST SIT THERE AND CALL WITH YOUR VOICE AND DON’T HAVE TO MAKE A MOVE AT ALL.
